THE TEAM THAT BUILT ULTRAVIOLET

UV TEAM
Paul Pairet, Chef and creator of Ultraviolet
Greg Robinson, Head of Research
Fabien Verdier, Host and Director of Ultraviolet

GREG ROBINSON,
"The American" (August 9, 1983 Columbus, Ohio) is Ultraviolet’s Head of Research and Pairet's direct kitchen collaborator.

Greg started his "career" in kitchens at the young age of 13, from washing dishes and making pizza. Six months following his graduation from Le Cordon Bleu Orlando in 2005, he moved to Shanghai and has continued working with Paul Pairet to date.

At Jade on 36 Greg grew as the best and most devoted Sous Chef, assisting Pairet in his food testing and implementation of new techniques, also organizing major culinary events such as Lo Mejor de la Gastronomia 2007, Madrid Fusion 2008, World Gourmet Summit 2008 and Ikarus of Hanger-7 2009. Continuing his career with Pairet to Mr & Mrs Bund in 2009, Greg served as the Executive Sous Chef and began overseeing all kitchen operations.

All these years of cultivation leads Greg to the Ultraviolet project, while his passion for food and trustworthy personality have made himself the right-hand man for Pairet - in Pairet's words, his right arm. At Ultraviolet this American chef will be managing the kitchen, food experiment, sensory research and consultancy development.

"Backbone of our structure and organization, Greg understands and can develop naturally any concept. My closest collaborator to date who has reached an unconditional level of trust." – PP

FABIEN VERDIER
(August 20, 1977 Clichy la Garenne) is Ultraviolet’s Host, Director and Pairet's restaurant first collaborator.

Fabien began working in the hospitality industry at the age of 16, before graduating with a BTS from the "Ecole Hoteliere Rene Auffray". He has gone through quite a journey which includes the 2 Michelin-star Plazza Athenee with Eric Briffard in Paris, the legendary Parisian Brasserie Charlot, Le Berkeley, Le Cou de la Girafe, and Alain Ducasse's Le Relais Du Parc.

In 2007 Fabien joined Jade on 36 Shanghai as Operation Manager, instantly adopting the city and Paul Pairet's avant-garde style. He followed Pairet to Mr & Mrs Bund in 2009 where he became one of the founders of this popular French eatery.

With over four years of heading Pairet's restaurants, Fabien is the face of the operation, making himself essential in Ultraviolet project. At Ultraviolet he will be the Host – guiding the guests through this unique journey, managing the front & back office, tuning the integration of service and technology.

"Fabien is a natural Host, a great professional cruising effortlessly the chaos of service with a smile, no condescendence and a word for each guest. Seriousness in gloves, without taking himself too seriously." – PP
